How to Cook a Classic Whole Roasted Chicken

Introduction

Welcome Sunday menu family when you think of Sunday lunch/dinner you think of a good Classic Sunday Roast. Whether that may be Roasted Chicken, Lamb, Beef, Ham etc. A roast is one of the best dishes to have on a Sunday with your family and friends. So what a great way to kick off our food blog with a step by step process on how we cook a classic Sunday chicken roast.



Prep - 10 Minutes

Cook - 1hr 20 mins


Ingredients

1. 1 free range British whole chicken, about 1.5 kg/ 3lb 50z

2. 25g of softened butter

3. 1 halved lemon

4. 1 tbs of Chicken Seasoning

5. 1tbs of All purpose seasoning

6. 1 tbs of Paprika

7. 1 Magi cube ( feel free to use as many magi cubes as you want)

8. 1 tbs of Garlic Powder

9. 1 tbs of basil

10. 1 tbs of black pepper



Method


Step 1

Preheat your oven to 190C 170C/ gas 5. Have a shelf ready in the middle of the oven without any shelves above it as this will be where your chicken will be placed to roast.

Step 2

Now place your wash and prep chicken on a baking tray. Take the tablespoon of softened butter and spread this under the skin of the chicken. Once done, take the leftover butter and spread this all over the chicken on top of the skin. Massage the butter inside and outside the chicken.


Key point - Reason why we do this is when the chicken is roasting in the oven it allows your chicken to remain succulent and tender.


Step 3

Take each seasoning and begin to sprinkle this all over your chicken.

Make sure once all seasonings have been added use fingers and massage the seasoning inside and outside the chicken until your chicken is all coated.

Take the halved lemon and squeeze the lemon juice inside and on top of the chicken. To finish off, take the tablespoon of honey and glaze this over the chicken.


Key point - The reason why we use Seasoning, Lemon and Honey. Is to add flavour to the chicken. The seasoning gives the chicken great taste, the lemon enhances the flavours of the seasoning and lastly the honey gives it that sweet taste and adds that final touch.


Step 4

Take a piece of foil and cover the top of the glazed chicken. Take the baking tray and place the glazed chicken in the middle shelf in the oven. Close the oven and allow the chicken to roast for 1 hr 20 mins.


Key Point - Whilst your chicken is roasting after the 1st 40 mins you can open the oven and grab a spoon and pour the juices at the bottom of the tray all over the chicken. Then recover the cooked chicken with the foil and allow it to cook for another 40 mins until fully roasted.

It's alway good to check on your chicken half way to judge how long it needs to take to fully cook. You will know when chicken is fully cooked as the juices will run clear.



Other Cool Tips

Always leave your chicken to rest for at least 15 mins before carving.

This will give you a juicy chicken that is a lot easier to carve. For a more succulent chicken, take it out of the fridge one hour before cooking to bring it up to room temperature.


Honestly, even though we mentioned above to check your chicken half way whilst it roasts, even though this does help and gives good results, we understand this can be a bit fiddly for a beginner, plus every time you open an oven the heat escapes which isn't what you want all the time. So just leave it to cook for the full time if you are still not too confident. Either way your chicken will still come out beautiful.
